Bosh Bowls

If you haven’t come across BOSH! yet then you are in for a treat. Henry & Ian have a great YouTube channel and an increasing array of cookbooks sharing their passion for vegan food. We particularly love their BOSH bowls. I love pulling together lots of different fresh flavours in a pick n mix kind of way and this is so flexible that you can knock one up with whatever you have available. They work for lunch or dinner and is soooo virtuous and healthy it’s beyond belief! Grab a bowl and start building yours

1.Choose your grain/carbs

2. Add your protein of choice

3. Add roasted or steamed veg

You can use whatever arrives in your veg box or you have to hand such as

  • asparagus

  • beetroot

  • carrots or parsnips

  • peppers

  • sweet potato

  • broccoli

  • mushrooms

  • courgettes

  • onions

Cube them, toss in a little oil and pop them in the oven for 30 - 40 mins stirring halfway.

4. Finely slice some fresh raw veg like

  • Spinach

  • Kale

  • Lettuce

  • Cucumber

  • Mangetout or sugar snaps

  • Spring onions

  • Grated carrot

  • shredded fennel

  • Red chilli

5. Roughly chop nuts and seeds or add whole

add raw or toasted, such as

6. Whip up a dressing

  • my fav is 1 garlic clove, 2cm of fresh ginger both finely chopped and mixed with 1 tbsp rapeseed oil, 1 tsp sesame oil and 1 tbsp soy sauce.

  • Try 200g fresh yogurt mixed with 2 tsp chopped mint and a pinch of salt

  • Spanish Aioli - crush 5 garlic cloves with 1 tsp sea salt and juice of 1/2 lemon in a pestle & mortar. slowly add 115ml Olive or rapeseed oil a tsp at a time and mix thoroughly before adding the next.

  • A drizzle of balsamic vinegar
