No yeast soda bread

No yeast? No problem. Soda bread is quick and easy to make. Get the kids doing this one -great science experiment too!

Ingredients:

  • Flour, 500 grams (you could opt for 500 grams of wholemeal flour, or opt for 250 grams of wholemeal and 250 grams of plain white flour for a slightly lighter loaf)

  • Bicarbonate of soda, 1 tbsp

  • Salt, a pinch or two

  • A large free-range egg

  • Buttermilk, 400 ml (alternatively, combine 400 ml of whole milk with the juice of one lemon)

  • Optional: finely chopped rosemary or raisins

Method: 

1. Combine your dry ingredients – that's flour, salt and bicarbonate of soda – in a large bowl. You can add rosemary, or raisins at this stage, should you choose to.

2. Add your buttermilk to the bowl, stirring until a large blob of dough is formed.

3. Transfer to the work surface, which you should cover in flour, and shape to form a  ball.

4. Cut a large cross on the top side of the dough, then transfer to a baking tray and bake for 40 minutes at 200ºC/180ºC fan oven/gas mark 6, or until golden brown.
